Trofie is a Ligurian pasta made with flour and water, no eggs. It is rolled by hand into little squiggly shapes and served with basil pesto. It is shaped by rolling a small piece of dough on a flat surface to form a short, round length of pasta with tapered ends, then twisting it to form the final shape. In Italian cuisine, it is served with pesto sauce. Basil Pesto is made with Genovese basil D.O.P. Intensely fragrant, this authentic Italian pesto also contains EVOO, cashew nuts, Grana Padano D.O.P, Pecorino Romano D.O.P, pine nuts, garlic and salt.
