The San Lorenzo is the Cavedoni’s newest balsamic.  It is made from Lambrusco and Trebbiano grape must that is first cooked for a perfect density, where is it is then aged for five years in a single oak barrel.  This vinegar is the culmination of many years work to find a balsamic with just the perfect balance.  This exquisite balsamic is perfect to be used as a finishing balsamic on fine cuts of meats and cheese, but at the same time is versatile enough to be used as a everyday balsamic.
