A conventional blade has a conventional hollow ground edge that has a concave curve that weakens as it tapers to a point. These edges frequently fail requiring constant maintenance. The Chef's Choice Dizor Engineered blade has two distinct facets set at different angles that form a longer lasting arched edge.
