How It Works:
The Model 702 uses 2-Stage sharpening; precision flexible guides for accurate control of the blade and sharpening angle; and the advanced diamond abrasive technology that has made Chef’sChoice sharpeners the choice of discerning consumers, leading chefs and blade enthusiasts worldwide.
Both ceramic and steel knives go through Stages 1 and 2 of the sharpener for first time sharpening and use Stage 2 for subsequent edge touch-ups. The stages work to create our signature arch-shaped edge that is widely recognized for astonishing sharpness and durability. This arch-shaped edge structure is known to be stronger and longer lasting than hollow ground or conventional “V” type edges. The Diamond UltraFlex™ finishing stage has been engineered with a proprietary blend of materials to Strop/Finish both ceramic and metal knives and apply a razor sharp, factory grade edge.
