Dark roast coffees are crafted by roasting the coffee beans longer and at higher temperatures.  The dark roasting increases the flavor and diminishes the acidity.  If the coffee beans are roasted too long the coffee becomes overly bitter.  It takes great skill and experience to achieve the targeted flavors of PapaNicholas dark roast profiles.
