Great - But Be Careful!!

Make sure to read the paragraph starting with HOWEVER. This is not a put-down of the unit. I have a large collection of Shun knives as well as other high end knives. I know to be very careful sharpening them, if you must. I also own another $150 electric multi-function sharpener for my German knives. I also have sharpening stones and know how to use them. Shuns should only need honing but my wife still complains that the steak knives (only the steak knives which are used every day) aren't sharp enough at times, even after I hone them. So I purchased this unit. (I still have 2 spare steak knife sets I picked up on a super sale). The amount of metal removed was unreal. They could cut through anything you can dream of now. Of course, this is not good for the knives. (They pretty much can anyway.) She's happy, and I'm happy because I'll slip in some that weren't sharpened this way and I'm sure she won't be able to tell because they are naturally that sharp with simple honing. That is simply because they are Shun knives. We do own seperate knife sets because I'm such a knife nerd. No other Shuns have needed other than honing. This sharpener will never touch my Shun sets. I do not recommend using this on Shun knives, too much metal is removed, unless they are on death's doorstep. HOWEVER, if you want to turn a butter knife into an ultra-sharp killer of monster meats, use this. I'm serious, I haven't tried it, but I'm sure it would work. If you have been using a Shun knife as a cardboard cutter, then you might need this. This would definitely be the last knife sharpener you would ever need.

Don't buy this if you value your knives!

I bought this along with my first Shun knife thinking that this has to be the best sharpener for them, right? I mean after all it's Shun just like these great knives! How wrong I was. Two knives and multiple chips later I threw this piece of junk in the trash and good riddance. First off it sheds stone dust like there is no tomorrow. That's not a good sign. If there's that much coming off the "stone" then how long do you think they will stay the proper geometry? Secondly it just destroys the blade. I looked at my Shun Ken Onion Chef's Knife one day and was like "what the hell, where did these notches come from!" So I figured I must have dropped it.... while I was sleeping? So what do I do I pull out my handy Shun sharpener to "fix" the problem. Now I have three times the amount of notches! Look at another knife, notches as well. Time for the trash. I ended up ordering a Chef's Choice 15 and wow wow wow what a difference. Super smooth, light touch sharpening. Completely corrected the damage done by the Shun and left the knife sharper than ever. Do yourself a favor and avoid the Shun sharpener like the plague. In my opinion it shouldn't even be sold and Shun should be ashamed for putting their name on it.
