Temperature control is difficult

I love the cooking surface. It is generous and wonderful to use. The vented glass lid makes it convenient to monitor cooking. The only problem is the temperature control. It sems to be warm/simmer or full-bore hot. I have been able to work with that but it means watching carefully all the time. Mrs. Photo Mike
