Zyliss Carving Knife

I love to cook at home and am employed as a sous-chef at a local restaurant. It is extremely difficult to find and maintain a good sharp knife among all the knives used at work (so many busy people using them), so I decided to invest in my own to use there. I started out with a Zyliss serrated paring knife, as we cook and peel 3000lbs of potatoes a week. I loved that little knife so much that I decided to purchase another Zyliss for larger work. The knives are extremely sharp, and maintain a excellent edge (I have not had to sharpen any of them, even after a month of full time use). I really like the "rubberized" hand grips, as this aids in retention and safety. The knives all come with a hard plastic blade guard, and I find this very useful, both for safety and keeping the blade from damage. The knives worked so well for me at work that I restocked my kitchen at home with Zyliss knives. I highly recommend these knives to anyone looking for high quality knives at a reasonable price.

Not great, but not the worst.

It looks nice, and it feels decent in the hand. A little light to hold I think, but as far as sharpness goes? It didn't fare well against a 12lb turkey being used by a guy who's carved birds for a couple decades, so i think that speaks volumes. Price was good, but I think that was reflected in the sharpness.
