I am going to be using on a few lamb and venison saddles as well but I suspect by the end the edge will be in pretty rough shape

Do Not buy this cleaver if you plan on chopping any bones harder than poultry. First use brand new I went to chop some pork shoulder bones and almost immediately bent the edge. I am going to be using on a few lamb and venison saddles as well but I suspect by the end the edge will be in pretty rough shape. Don't let the title fool you it is not for heavy duty use.
