Good pan (Updated after 6 years!)

I've been using it for a year and still love it. Thinking about getting a second one to replace my secondary pan that's a different brand and not as nice, now that I know this stands the test of time. This heats evenly and keeps my food from sticking. Doesn't scratch easily either.UPDATE:Purchased this in 2016 and left the above review a year later in 2017. I purchased a second one of the same thing in 2019. It is currently 2022.I loved my first pan and after a year it was still in great condition, as I reviewed above, but in early 2019 (2.5 years after purchase) it suddenly started losing its nonstick abilities and the cooking surface gradually turned black-ish. I cooked with and hand-washed that pan once or twice daily as it was my primary pan and we cook all meals at home.I was disappointed that it had worn out, but it had lasted me a good 2.5 years of daily use, which I considered worth the cost I had paid. I had liked it so much that instead of replacing it with something else, I purchased another one of the same thing (2019). I have been using that second pan once or twice daily since (three years) and it's still in great condition. Very recently I've noticed the bottom of the pan has a slight brown tint to it, but it's still plenty nonstick and seems to be lasting longer than my first pan.I attribute the second's longevity to two changes I made in my use of them. About the time I needed to replace my first pan I learned that nonstick frying pans are damaged by high heat and by immersing the pan in cold water while it's still hot. So with this second pan I no longer use a temperature above medium-high (this is not the pan to use for searing meat, for example). Medium-high or lower temperatures are fine for most home cooking, so this doesn't bother me.I also no longer fill the hot pan with tap water immediately after removing from heat (which I was doing to soak any gunk left behind to make it easier to clean later). Most things don't leave gunk behind anyway because it's nonstick, but if I cook multiple rounds of meat in one pan, for example, sometimes the juices left behind by the first batch become stubborn as they continue to cook throughout the following batches. I've learned that if I wait for the pan to cool naturally, anything that has been left behind wipes out easily with a paper towel, or washes off with a dish sponge. No soaking required now that I'm caring for the nonstick pan properly!I suspect that those who complained about this pan being ruined after a year either used too high of a heat or doused the hot pan with cold water. Please don't do this to your nonstick pans! Any failure then is not a result of the product but of these poor practices.Nearly six years after my first purchase I am still very pleased with this product. I like the size of it and its thick, heavy bottom for even heating. If my current pan wears out eventually, I'm confident I'll get another one of the same thing. I'm a very happy customer!

Nice Pan a a Reasonable price

2016 UPDATE lost a star We have used the pan for 6 months and has developed a high spot in the middle so frying is kind of ok because the grease runs to the outside but anything with a light sauce the contents in center burns. I do not put my pans in the dishwasher and I do not rinse them in cold water while the are hot.Original review: I ordered this pan to replace a Calphalon pan that was 4 years old and sticking and scratching. I would not spend the money for Calphalon again and I have a whole set. So I did some research and decided on Techef. It has been used almost every day and it is still quite non- stick. It also is coated on the outside of the pan so it cleans well both inside and out. TeChef also offered a lifetime replacement with this model so we will see.I also got the TeChef - Tempered Glass Lid, 12-Inch It stands upright by itself which is pretty cool.So far so good with this pan will update if needed.Disclaimer: I was offered a $5 rebate to write a review of this item. I usually do review my purchases so it really was an extra bonus.

I’m really happy with my pan. I think Techef has really figured out this whole introduction cookware.

This is not the first pan that I buy from Techef. But this one is definitely different than all the other ones. I have several of the pans from the onyx collection and they have more of your traditional Teflon. This pan is from the infinity collection and coating is completely different. It has more of the stone speckled feeling to it.PROS:** Induction:I have an induction stovetop and it’s been really difficult for me to find good cookware. Pans have either been good quality but not induction or induction but of terrible quality. I was really happy to find that this pan has everything I needed. Good quality induction at a great price.** Weight:Like my other Techef pan this one has a nice weight to it. It doesn't feel lightweight and flimsy like some other pans I've owned. This on weightier but is as well balanced as a top dollar pan.** Heat distribution:I use this with an induction stovetop and it does wonderfully. It heats up quickly and evenly so there are no hot spots on my pan.** Handle:The handle has a type of finger pad or rest on it. It makes it feel a lot sturdier and more stable when moving it around. I also really like the fact that It has a good size hole on the end of the pan handle. It's convenient since I can hang it if I choose to.CONS:The only thing that could make this pan better is a lid. Not a deal breaker for me since my old 12” Techef lid fits this pan perfectly.VERDICT:I’m really happy with my pan. I think Techef has really figured out this whole introduction cookware. I have some of their pans that I use every single day and they still look and perform as good as the first day. Great quality, non stick at a reasonable price. I'm sold.

I literally use this frying pan "5 days a week and twice on Sundays", for 6 months so far. I still use a little bit of EVOO spray for most of my cooking, but even so, the pan is DEFINITELY "non-stick". I've left a few frittatas in the pan a bit longer than I should have, and after some coaxing around the edges with a spatula and a shake of the wrist, they break loose and slide out. It wipes clean with a wet paper towel, the handle provides a safe and sturdy grip even for my XXL hands, and you can really feel the rigidity of the stainless steel base. It heats **pretty** evenly, though some spots seem the slightest bit hotter than others (see aforementioned frittatas).All said - I would definitely purchase it again. I admit, for a nonstick fry pan this one looks kind of odd to me, but my husband loves it! We've had this one for almost a week, and we've been using it daily. Our stove is a gas range. Using medium heat was just fine for all the things we did: fry eggs (used a little nonstick spray), fry bacon, make sloppy joe's, fry sausage...you name it, it performed excellently! The heat distribution is great - can't believe I didn't get weird burn spots on my bacon!! The clean up was also very easy. My toughest test was making pork tonkatsu where I actually had to put about 1/4 inch of canola oil in the pan. Nonstick pans are max medium heat - would this pan be able to get the oil hot enough? I had it on level 5 (on a 10 scale for heat), and the oil heated to just under 400 degrees - perfect for frying and getting a nice, crispy crust on the meat. I know it's hard to judge a pan's longevity, but the way this one is crafted certainly gives the impression it will last a long time (provided you use it as recommended by the manufacturer). We highly recommend it!

I have just received this pan and have cooked on it for the first time. It cooked evenly and no sticking. I used a little bit of coconut oil in the pan and it worked beautifully. No sticking whatsoever! I wish it had been a little deeper and had come with a lid. That would have make this perfect. Clean up was a breeze. Glad I purchased it and I am glad the food didn't stick because this is the first time I have used this coating type.

I've been a big fan of TeChef products over the past few years. They're about all I use now -- except for my old, trusty Berndes big saute for major meals.What TeChef does best, IMO, is produce terrific, 12' saute pans. This is my third, and easily the best, most complete pan I have. The stone coating is fabulous, and provides swift, even heat with my gas range. For example, last night I sauteed some ham pieces, mixed in some potatoes O'brian, and let that cook for just five minutes, before adding a scrambled egg and gruyere cheese combo and, effectively, stir frying for another two minutes. Voila! We had a perfect -- cooked, tho velvety soft, kind of Spanish tortilla that was the best we'd ever had. This pan is a gem!What's more, TeChef makes a great, 12' glass cover which fits all it's 12' pans -- and worked well with this, too. (Requires a separate purchase, but well worth it.) The top, itself, has two nice qualities beyond the see-thru glass: first, it has a steam release; second, it can stand on its side while you stir -- so no oils or drippings when it's not in use.This pan will now be my go-to -- along with the TeChef 12" Wok-style pan, which is super, too -but a cut below the quality of this Infinity pan.

Non-stick function was good at the time of this pan's first use. However, the pan did not function well on my induction stove, as I had to place it in just the right spot for it to make a connection and then heating was slow and inconsistent. Therefore, I plan to return it. I have had no past issues with induction-ready cookware on my stove, so I think this pan is just not ideal for induction. It may work just fine on gas or electric.

I've only used this skillet a couple of times so far. I really don't like the way it's bowed up in the middle. Only the outer edge of the stove burner touches the skillet. I'll have to use a little more.

Update 8/21/18: At right around two years of use the pan started to lose its non-stick surface. Was still able to use, but once it started sticking it went fast. Most non-stick pans will roughly last a couple years, so while disappointed this wasn't surprising. Since I liked the pan and it worked well, I decided to purchase a second for the next couple years.Update 7/5/17: This pan has been my primary go-to for close to 10 months now. Continues to evenly heat and the surface has remained non-stick. Own other stone non-stick pans, yet this has been the best for me.Original Review: Have only had for a couple days, but so far this frying pan has been brilliant. Really easy to use as it heats up fast and simple to clean. Very well built as it contains solid materials.
