When you need more precision than a knife

I’m reasonably good with a chef’s knife. There are times, such as any gratin potatoes or julienne carrots, where more precision (or greater safety) are required. I have used this mandolin quite a few times since receiving it. It has performed nearly flawlessly. There are several features which in my opinion make it stand out among mandolins. Safety. Mandolins must be used carefully. This unit has a locked setting where the blades are tucked away to minimize accidental cutting. The blade is removable should you think that important. The holder for slicing the food is spring-loaded with an indicator on top giving you an idea of how much remains to be sliced. It is also equipped with 3 pins which penetrate the food to lessen slippage during use. With those in mind I use and recommend a cut-resistant glove. Utility. Thickness settings are achieved with a knob on one side. There is an indicator on the side with positive stops at each thickness. Moving beyond the thickest slicing setting there two additional choices for julienne slicing. The removable blade is also reversible which permits making rippled slices. The foldable foot is rubber-coated and well constructed making for good stability while using. Do remember though that those slices have to go somewhere so be prepared to move them from beneath the slicer frequently and keep your countertop reasonably dry. If you are in the market for a mandolin I can recommend you seriously consider this one.

I love Oxo, but this thing is *AWFUL* - Unable to cut anything!

I bought this on the recommendation of Cooks Illustrated, and to be honest, it's the worst mandoline I've ever used. I had major issues with both the blade and the hand guard. First off, the blade: it is not sharp. And when I say "not sharp" I mean "unable to cut anything." You have to forcefully slam any hard vegetables (carrots, potatoes) down into the blade just to get them through, and the slices end up jagged and uneven. You have to use so much force, my forearm was sore after attempting to make French fries. Anything softer than a potato is just turned to mush: cucumbers and firm tomatoes are turned to liquified puddles instead of clean slices. At first I thought it was user error and I was just getting used to the mechanics of a new tool. After hacking several pounds of potatoes to bits, I checked the blade on a piece of paper, and then my skin. It was only then I realized it was blunt. Completely dull, and unable to slice anything. It's like I a received a unit with a defective, entirely unsharpened blade.... and because of the single angle edge, I was unable to sharpen myself. Separately, the hand guard is really awful. The "spring" mechanism is so strong, I was unable to get any veggies to stay IN the hand guard for slicing. Zucchini, carrots, potatoes... they will all shoot out of the hand guard and across the room after loading, and you have to press down forcefully while slicing to make sure the guard doesn't come off of the vegetables. Completely useless, and a design that doesn't actually seem to solve any issues. I will say that Oxo make generally great products... I have tons that I love and use regularly. I also know that they probably would have tried to fix the issue, but the quality of the blade and design of the hand guard seemed so misguided that it was a moot point. I ended up returning this item and got a refund.
