Fantastic value

I was looking for a good filet/boning knife and I didn't really want the most expensive, coolest looking thing since I don't take all that great of care of my knives. This knife is a fantastic value. The grip is great, the knife came very sharp and has held it's edge well. It's worked great for cutting ribs, de-boning a rib roast, etc. This knife is a perfect fit for my needs and budget. Great job, Dalstrong.

Good for home use, bad for work use.

I cut cut meat for a grocery market so please keep this in mind as you my review.Pros: Comes out the box sharp.-Thin blade which is nice for getting precise cuts.-Scalloped edges creates space between the blade and meat when cutting.Cons: I can't seem to get the burr off which makes the blade dull by stone. I can see the burr with my bare eyes even after sharpening it on a 6000 grit stone.-After the blade has become dull it takes a while to give the blade a proper bevel. Even when I do I'm stuck with the burr that I have to take out with a buffer which usually turns the blade razor sharp.-Unlike out of the box the cutting edge does not last long. I find myself resharpening the blade every week and sometime after a few days.-Sometime a honing stick will help but this remedy is short lived.-The scalloped edge is awkwardly placed in a straight line running up straight across the blade rather than following the contour of the cutting edge. It's nice to have a scalloped edge but the placement needs work.-I don't like the handle. The ridges forces your hands to turn your wrist more than a rounded handle. Which is not comfortable because you're putting your wrist in a position where it's not as strong which would cause issues later if you're using it for hours on end.-The blade is very light which is understandable because of the thin blade. This also forces you to apply more downward pressure in order to make your cut.Overall, as a blade for home use it is very nice. I don't know much you would use this knife at home but I would imagine that it would be much less than a butcher would. But for a butcher this knife would be very inconvenient for the cons. Nice price but the time you spend maintaining it makes it more expensive than a well known brand like Victorinox. Be Gucci my dudes.
