KATSURA 5-inch Small Santoku Knife

I trust Katsura to provide straight, high quality blade blanks, and this model is no exception. The steel and temper is top quality, and the new handle design is very sleek. Hamon line easy to see and very straight. This version is a little more difficult to measure and fit, but the end result is perfectly balanced and beautiful. I went for a blue and white acrylic for this piece. Always impressed with the beautiful mosaic pin supplied with each kit. New for 2022 is the honing steel, which is a nice touch if you are making a whole line of custom pieces. This thing puts a wicked edge on your knives, and is more a sharpener than a honing steel. The handle leaves you room for both full coverage, and a lanyard-hole style relieved spot - pretty slick when all finished up!
