I use these guides to create uniform thickness cookies. It is also helpful that you can stack them for additional desired height! Easy to clean and store, doesn't slide around on you when trying to roll out dough!

Difficult as have to move the strips per direction of rolling pin. I think the guides that are placed on the ends of the rolling pin would work a lot better.
